Gooey Mini Skillet Cookies for Two
These mini skillet cookies are the PERFECT dessert for two! They’re ready in under 30 minutes and bake into the most delicious rich and gooey chocolate chip cookies. This recipe is also completely gluten and dairy free with a vegan option as well…although you would never even tell these are free of anything because they’re just that good!

This is the PERFECT dessert for date night or just when you want a cookie STAT! These mini skillet cookies are ready in under 30 minutes and makes exactly two servings…or one big serving if your sweet tooth really needs it.
Here is everything needed to make these skillet cookies for two:
- 2 ramekins
- Coconut oil
- Natural nut or seed butter (I use almond butter)
- Coconut sugar (or brown sugar)
- Pure maple syrup (make these cookies extra gooey)
- 1 egg yolk (or 1 tablespoon plant milk for a vegan option)
- Vanilla extract
- Salt
- Baking soda
- Almond flour (or oat flour)
- Chocolate chips
Everything is mixed together into a thick dough and pressed into two ramekins. The entire preparation process takes about 5 minutes and then the cookies just bake for 15! Quick, simple, and so delicious.

The best part about this recipe is that it’s so easy (and fun) to customize!
Instead of almond butter, swap with natural peanut butter and mix in some chopped dairy free peanut butter cups.
For a completely different flavor, sub the almond butter with chocolate SunButter for a rich and chocolatey cookie.
Basically anything can be mixed in as long as it equals out to 1/4 cup! Your favorite chopped candy, nuts, dried fruit…just stay away from anything wet like fresh fruit as this can alter how the cookies bake.

Ramekins are the best option for these skillet cookies. They bake super fast with an extra gooey center. But if you don’t have any ramekins on hand, here are a couple different options:
- Coffee mug – If you have some oven-safe coffee mugs, these can be used instead. Just make sure to bake for about 20 minutes to make sure the cookies heat all the way through.
- Muffin tin – Instead of two cookies, split the dough into four and bake in a muffin tin for about 10-12 minutes.
- 1 lb loaf pan – This is less conventional, but the dough can be spread into the bottom of a 1 pound loaf pan and baked for 15-18 minutes.
- Mini cast iron skillets – If you have mini skillets instead of ramekins, these will work just fine!
This dough is very forgiving and can easily be baked in different containers. Just note that the more tall and narrow the dish, the more gooey the center of the cookie will be!
Can these cookies be baked in an air fryer?
I haven’t tested it myself but I don’t see why not! Follow all the same baking instructions and you’ll likely be left with a cookie that’s extra crisp on the outside with an extra gooey center.
What are the best chocolate chips to use?
Since these are mini skillet cookies, I like to use a mix of mini and regular chocolate chips. This creates an even distribution of chocolate throughout the cookie but in all honesty, any type of chocolate will work!
Mini, regular, chunks, or chopped chocolate will do the trick. If you’re dairy free or vegan, just make sure to use dairy free chocolate. My favorites are the Enjoy Life mini semisweet chocolate chips and Trader Joe’s semisweet chocolate chips.

Ingredients
Deep Dish Skillet Cookies for Two
- 3 tbsp natural almond butter (any natural nut or seed butter will work)
- 1 tbsp melted coconut oil, plus more for greasing
- 3 tbsp coconut sugar (or brown sugar)
- 2 tbsp pure maple syrup
- 1 large egg yolk (or 1 tbsp plant milk)
- 1/2 tsp vanilla extract
- 1/8 tsp kosher salt
- 1/8 tsp baking soda
- 1/2 cup (50g) almond flour (or oat flour for nut-free option)
- 1/4 cup (40g) dairy free semisweet chocolate chips
- Dairy free vanilla ice cream, for serving
Instructions
Deep Dish Skillet Cookies for Two
- Preheat the oven to 350F and place two 8oz ramekins (see notes for different baking options) on a baking pan. Lightly grease the inside of each with some coconut oil.
- In a small bowl, mix together the nut butter, coconut oil, sugar, maple syrup, egg yolk, and vanilla.
- Mix in the salt and baking soda.
- Then mix in the almond flour followed by the chocolate chips.
- Divide the dough between the two ramekins and press even.
- Top with a sprinkle of extra chocolate chips (if desired) and bake for 15-18 minutes. 15 minutes is the perfect amount for the shallow ramekins I used, but if you’re using deeper dishes shoot closer to 18 minutes.
- Allow the cookies to cool for about 5-10 minutes, then top with ice cream and dig in!

BAKING OPTIONS – If you don’t have ramekins, oven safe ceramic mugs can be used but bake for 20 minutes (the center will also be extra gooey). A muffin tin can also be used but split the dough between 4 cups and bake for 10-12 minutes.

Can you use like almond meal instead of almond flour and can you also use a different oil?
This was dangerously good LOL I had an emergency cookie craving and decided to give this recipe a try since it has healthier ingredients than a regular cookie. I cut the maple syrup by half and used dark chocolate chips and it was AMAZING
Made some minor modifications. Didn’t have eggs so used oat milk and used oat flour in place of almond.
