If summer had an official cocktail, I think this Blackberry Gin Spritz would be a strong contender. It’s light, bubbly, fruity, and just the right amount of refreshing for warm afternoons, backyard parties, and slow evenings on the patio.

What makes this spritz stand out is the homemade blackberry simple syrup. Fresh blackberries are simmered down into a sweet and vibrant syrup that gives the cocktail a beautiful berry flavor without tasting overly sweet. Paired with floral St-Germain, botanical Empress gin, a squeeze of fresh lemon, and plenty of bubbles from Sprite, every sip is bright, crisp, and incredibly easy to love.

And while it looks fancy enough for entertaining, it’s surprisingly simple to make. Once you have the blackberry syrup prepared, the cocktail comes together in a snap.

Tips for Cocktail Success

Honestly, this cocktail is so easy that very few tips are needed! But here’s what you need to know:

  • Blackberry Simple Syrup – Mash the berries into a pulp as this will enhance that berry flavor. Once it’s pushed through a strainer to remove all the seeds, make sure the syrup is completely chilled before use.
  • Ice – Use plenty of ice to keep the drink extra crisp and refreshing on those hot summer nights.
  • Stir Before Sipping – It looks gorgeous once the Sprite is poured on top, but it tastes the best once stirred into one even color.

Can I make the blackberry syrup ahead of time?

Yes! The syrup can be stored in an airtight container in the refrigerator for up to 2 weeks.

Can I use another gin or vodka?

Absolutely. Empress Gin provides the beautiful color, but any quality gin will work. If you’re more of a vodka drinker, that also works here!

Can I use sparkling water instead of Sprite?

Yes. Sparkling water creates a less sweet cocktail while still providing plenty of fizz.

How can I batch this cocktail?

I recommend batching all of the ingredients together minus the Sprite. That way, you just have two things to pour together to create an incredibly quick cocktail – perfect for hosting!

Description

This Blackberry Gin Spritz is one of those cocktails that feels special without requiring a lot of effort. Homemade blackberry syrup adds a fresh, seasonal flavor, while the combination of elderflower, gin, citrus, and bubbles creates a drink that’s refreshing, elegant, and incredibly easy to sip. 


Ingredients

Blackberry Syrup (enough for about 10 cocktails)

  • 1 cup (150g) fresh blackberries (or thawed frozen berries)
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (120g) water

Blackberry Gin Spritz

  • 1 oz St Germain
  • 1 oz Empress Gin
  • 3/4 oz blackberry syrup
  • 1/4 wedge of lemon
  • about 4 oz Sprite, chilled (regular or zero sugar)


Instructions

Blackberry Syrup

  1. Add all of the ingredients to a saucepan over medium heat. Stir and heat until the blackberries start to bleed their color and become tender. At this point, use a potato masher and mash up the blackberries into a chunky pulp. Once mashed, allow the mixture to bubble for 5 minutes, stirring often.
  2. Remove from heat and run the syrup through a mesh strainer over a glass container, pressing out the seeds and pulp to leave you with a clear blackberry syrup. Refrigerate the syrup for at least an hour before making a cocktail.

  1. Add the St-Germain, gin, blackberry syrup, and lemon juice to a large wine glass. Fill with ice and top with chilled Sprite. Stir and enjoy!
