Description

This Blackberry Gin Spritz is one of those cocktails that feels special without requiring a lot of effort. Homemade blackberry syrup adds a fresh, seasonal flavor, while the combination of elderflower, gin, citrus, and bubbles creates a drink that’s refreshing, elegant, and incredibly easy to sip. 


Ingredients

Blackberry Syrup (enough for about 10 cocktails)

  • 1 cup (150g) fresh blackberries (or thawed frozen berries)
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (120g) water

Blackberry Gin Spritz

  • 1 oz St Germain
  • 1 oz Empress Gin
  • 3/4 oz blackberry syrup
  • 1/4 wedge of lemon
  • about 4 oz Sprite, chilled (regular or zero sugar)


Instructions

Blackberry Syrup

  1. Add all of the ingredients to a saucepan over medium heat. Stir and heat until the blackberries start to bleed their color and become tender. At this point, use a potato masher and mash up the blackberries into a chunky pulp. Once mashed, allow the mixture to bubble for 5 minutes, stirring often.
  2. Remove from heat and run the syrup through a mesh strainer over a glass container, pressing out the seeds and pulp to leave you with a clear blackberry syrup. Refrigerate the syrup for at least an hour before making a cocktail.

Blackberry Gin Spritz

  1. Add the St-Germain, gin, blackberry syrup, and lemon juice to a large wine glass. Fill with ice and top with chilled Sprite. Stir and enjoy!
