Yes you heard that right, scoopable cheesecake. This recipe takes all the stress out of this decadent dessert! No water baths, no delicate mixing, and zero bake time. A creamy, no bake cheesecake base is layered with sweet graham cracker crumbs and a homemade strawberry sauce. Then chill, scoop and serve!

There’s something about cheesecake that makes every occasion feel a little more special. But let’s be honest, it can also be a bit of a commitment. Water baths, cracked tops, waiting for it to cool…sometimes you just want the creamy cheesecake experience without all the extra work.

That’s exactly how this scoopable cheesecake was born.

Think of it as the easiest cheesecake you’ll ever make. An ultra-creamy no-bake cheesecake is layered with buttery graham cracker crumbs and homemade strawberry sauce. After a few hours in the fridge, it firms up just enough to hold those beautiful layers, but stays soft enough to scoop straight from the pan like ice cream.

It’s somewhere between a cheesecake, an icebox cake, and a frozen dessert but honestly, it deserves its own category.

Cream Cheese – Use room temperature cream cheese for a smooth consistency. Also stick with full fat for the best texture. Take it step further and use Philadelphia cream cheese for the highest level of flavor and consistency.

Heavy Cream – Whipped heavy cream helps this cheesecake set, but too much and it can create a mousse-like texture. The filling is folded with just enough to maintain that signature dense and creamy cheesecake texture.

White Chocolate – I love using melted white chocolate in my no bake cheesecakes. It allows the cheesecake to set a bit more firm, so it looks and feels like a baked cheesecake but, of course, minus the baking. Don’t worry – if you’re not a white chocolate lover, you can’t taste it!

Graham Cracker – The crust is arguably the best part of a cheesecake, so this scoopable version is layered with tons of sweetened graham cracker crumbs.

Strawberry Sauce – To give this scoopable cheesecake a bit more texture and flavor, it’s layered with a simple and homemade strawberry sauce. Canned strawberry pie filling can also work if you want to make this recipe even easier!

Tips for the Best Scoopable Cheesecake

  • Allow the cream cheese to come fully to room temperature before mixing. This will prevent any lumps and bumps.
  • Chill the cheesecake for at least 6 hours, but overnight is even better.
  • Let the strawberry compote cool completely before layering so it doesn’t melt the cheesecake filling.
  • For the cleanest scoops, use a trigger release ice cream scoop! Run it under hot water and shake dry before each scoop.

Once you have the cheesecake base, the possibilities are endless! Here’s how you could tailor this recipe to your liking, or to whichever season you’re in:

Scoopable Cheesecake FAQs:

Can I use frozen strawberries?

Sure! Just thaw and drain off any excess before use.

Can I use store-bought strawberry sauce?

Yes you can. You could use canned strawberry pie filling in which you’ll need about 2 cups.

How far in advance can I make this?

If it’s untouched, you can make this two or three days in advance. Otherwise, once dug into, the strawberries will begin to leak their juices and create a watery mess.

Does this freeze well?

Yes. Freeze the pan tightly wrapped for up to 2 months. Let it sit at room temperature for about 30 minutes before scooping.

How can I make this gluten free?

Replace the graham crackers with 94g of gluten-free graham crackers (I like Simple Mills sweet thins or Pamela’s) and reduce the butter to just 3 tablespoons.

Can I omit the white chocolate?

This is the secret ingredient that allows this no bake cheesecake to set like a creamy and dense baked cheesecake. I don’t recommend leaving it out! If you don’t like white chocolate, don’t worry as it goes nearly undetected.

Description

Creamy and effortless, this no-bake scoopable cheesecake is layered with buttery graham cracker crumbs and homemade strawberry sauce. After chilling, it sets just enough to hold its layers while staying soft enough to scoop like ice cream. It’s an easy make-ahead dessert that’s rich, refreshing, and perfect for sharing straight from the pan!


Ingredients

Strawberry Sauce

  • 1 pound fresh strawberries (or frozen, thawed)
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice or water

Graham Cracker Crust

  • 6 full graham cracker sheets (94g) *see notes for gf option
  • 2 tbsp granulated sugar
  • Pinch of kosher salt
  • 1/4 cup (56g) unsalted butter, melted

No Bake Cheesecake

  • 1/2 cup (120g) heavy whipping cream
  • 3 8-oz blocks full fat Philadelphia cream cheese, room temperature
  • 1 1/2 cups (165g) powdered sugar, spooned and leveled  
  • 1/4 cup (60g) sour cream
  • 2 tsp vanilla extract
  • 4 oz Ghirardelli white chocolate bar, chopped (don’t use chips)


Instructions

Strawberry Sauce

  1. Rinse, hull, and quarter the strawberries. Then in a medium saucepan, stir together the sugar and cornstarch then toss in the strawberries to evenly coat. Stir in the lemon juice and place over medium heat.
  2. Bring mixture to a boil, stirring occasionally, and heat for about 5-8 minutes or until strawberries become tender. Once soft, use an immersion blender or scoop out half of the mixture into a blender/food processor to puree. Return to the saucepan and stir for another minute until glossy and thickened.
  3. Pour the sauce into a container and transfer to the refrigerator to cool.

Graham Cracker Crust

  1. Add the crackers to a large ziplock bag and whack until broken into a fine crumb. Transfer to a medium bowl and stir in the sugar and salt, followed by the melted butter until evenly coated. Set aside.

No Bake Cheesecake

  1. In a large mixing bowl using a hand or stand mixer with the whisk attachment, whip the heavy cream until you reach stiff peaks, about 2 minutes. Scoop out into a separate bowl and now in the same mixing bowl (no need to clean it) add the cream cheese and sugar and mix until smooth. Scrape down the bowl and mix in the sour cream and vanilla to incorporate. 
  2. Melt the chopped white chocolate in the microwave in 30 second intervals until smooth. It shouldn’t take more than 90 seconds total, and be careful not to overheat otherwise the chocolate can seize.
  3. Mix the warm chocolate into cheesecake mixture to create a creamy consistency. Use a silicone spatula to give it one good mix by hand to ensure everything is evenly combined. Then fold in the whipped cream until the two seamlessly blend together.
  4. Spread half of the mixture into the bottom of an 8×8 pan. Swirl in a little more than half of the strawberry sauce and top with a layer of about 2/3 of the graham cracker. Repeat these layers one more time to fill the pan. 
  5. Now for the hardest part, cover and chill overnight. The next day, use an ice cream scoop to dish up your servings and enjoy the magic of scoopable cheesecake!

Notes

GLUTEN FREE – Use the same weight in gluten-free graham crackers (I like Pamela’s or Simple Mills sweet thins). Then reduce the butter to just 3 tablespoons.
