How to make a rosemary pomegranate margarita

I’m all about keeping my cocktail recipes simple and easy with minimal ingredients that pack a punch! And this recipe is no exception. All you need is:

  • Sugar
  • Rosemary
  • Blanco Tequila
  • Orange Liqueur
  • Pomegranate Juice
  • Limes

It starts with a rosemary simple syrup that is ridiculously easy to make but adds so much flavor to this cocktail. Rosemary steeps in warm liquid sugar to capture all its herby flavor.

Then it’s combined with the rest of our ingredients and stirred in the cocktail glass. This includes our blanco tequila for a smooth tequila flavor, orange liqueur to compliment the sweet and tart pomegranate juice, and lime juice to help brighten up the cocktail and cut through the sweetness.

All together, this cocktail is well balanced but full of flavor. It’s not too tart, not too sweet, and not too strong. It’s the perfect cocktail for any Holiday party!

Liquor preferences

Blanco Tequila – Espolon Blanco Tequila is always my go-to. It’s incredibly smooth and pure without any weird vanilla artificial flavors added in. It’s also at a very reasonable price point and can be found at most grocery and beverage stores.

Orange Liqueur – I’m not as picky here, but I always go for Cointreau as it never fails.

How to make rosemary simple syrup

To infuse the flavor of rosemary into this cocktail, we start by making homemade rosemary simple syrup.

Simple syrup is just equal parts water and sugar that’s heated until the sugar is dissolved. To incorporate some added flavor, rosemary is dropped in while the syrup is still piping hot.

The mixture steeps for 30 minutes to 1 hour. I prefer the one hour mark as I find this provides the most rosemary flavor, but 30 minutes will also do the trick!

Once cooled, the syrup is chilled in a glass container until we’re ready to make our cocktails. For even MORE flavor, drop a sprig of rosemary in with the simple syrup before chilling.

Pomegranate margarita garnish

Most importantly, garnish each cocktail with a sprig of rosemary! Inhaling the scent of fresh rosemary only adds to the herby flavor.

Can I substitute a different alcohol?

If tequila isn’t your thing but you would still like to enjoy a delicious rosemary pomegranate drink, here are some swaps you can make:

Mezcal – Swap one for one with the tequila for an added smoky element

Gin – Swap the tequila with 1 oz gin and omit the salt rim. Gin pairs really well with the herby rosemary.

Description

This rosemary pomegranate margarita is the perfect Christmas cocktail! It’s perfectly balanced with pure pomegranate juice and an easy rosemary simple syrup.


Ingredients

Rosemary Simple Syrup

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/4 cup fresh rosemary

Salt Rim

  • Lime wedges
  • Flaky sea salt

Rosemary Pomegranate Margarita (for 1 cocktail)

  • 1.5 oz blanco tequila
  • 1 oz orange liqueur
  • 1 lime, juiced
  • 2 oz 100% pomegranate juice
  • 1/2 oz rosemary simple syrup
  • Pomegranate seeds and rosemary sprigs for garnish

Instructions

Rosemary Simple Syrup

  1. Combine the water and sugar in a medium saucepan over medium heat.
  2. Bring to a simmer and allow the sugar to fully dissolve. Drop in the rosemary and continue to simmer for 30 seconds.
  3. Remove from heat and let the syrup steep for 30 minutes to 1 hour. The longer it steeps, the stronger the flavor.
  4. When it’s done steeping, strain into a glass container and chill until you’re ready to make the cocktails. The syrup is the most flavorful the day of, but it can be refrigerated for up to 3 days.

Salt Rim

  1. Cover a small plate with flaky salt and run a lime wedge around the rim of a cocktail glass.
  2. Rub the rim into the salt and then fill the glass with ice.

Rosemary Pomegranate Margarita

  1. In the cocktail glass, stir together the tequila, orange liqueur, lime, pomegranate juice, and simple syrup.
  2. Garnish with pomegranate seeds and a sprig of rosemary. Enjoy!

  1. This recipe is absolutely perfect! I’m not personally a huge margarita fan, but my husband is, and every once in a while I like to try to find a fun and not to difficult recipe to try for him. This is 5 STAR approved by him, and I actually love it too! It’s the perfect melody of flavors. And it’s really simple to make too. I multiplied the recipe X10 to make a picture for Thanksgiving and it was a hit! I’ve been making my guy a single glass of it throughout this winter season since!
