This fresh peach cobbler recipe knocks the socks off of canned peach cobbler! The peaches have so much more flavor and bake into delicious slices that are tender but too soft or mushy.

WHAT YOU NEED Peaches slightly under ripe yellow peaches pecans vanilla extract lemon juice light brown sugar ground cinnamon cornstarch Cobbler Topping all purpose flour baking powder salt light brown sugar unsalted butter heavy cream raw sugar

1. Bake the pecans until toasted and fragrant. 2. Add the sliced peaches, vanilla, lemon juice, brown sugar, cinnamon, and cornstarch to a skillet. Roughly chop the toasted pecans and add to the peaches.  4. Bake for 10 minutes. In the meantime, make the cobbler topping.

5. Whisk together the flour, baking powder, salt, and brown sugar. Add the chilled and cubed butter and toss to coat the cubes in the flour mixture. 6. Work the butter into the mixture. 7. Pour in 1/2 cup of heavy cream and stir to combine.

8. Grab chunks of the cobbler dough and roughly flatten with your hands. Place the cobbler dough on top of the warm peaches. 9. Brush with the remaining 3 tbsp of heavy cream and sprinkle with raw sugar. 10. Bake for 20-25 minutes, or until the edges are thick and bubbling and the cobbler topping is a light golden brown.
