WHAT YOU NEED gluten free baking flour gluten free quick oats baking powder salt mashed banana natural peanut butter coconut sugar honey eggs vanilla extract dairy free semi sweet chocolate chips
1. Whisk together the flour, oats, baking powder, and salt. Set aside. 2. In a large bowl, mix together the banana, peanut butter, coconut sugar, and honey. 3. Once smooth, mix in the eggs and vanilla. 4. Mix in the dry ingredients and then the chocolate chips.
5. Evenly distribute the batter between the liners, filled almost all the way to the top. Sprinkle on some extra chocolate chips if desired. 6. Bake for 18-22 minutes or until a toothpick in the center comes out clean. 7. Let the muffins cool in the tin for about 10 minutes then transfer to a cooling rack.
