PEANUT BUTTER

PIE RECIPE

no bake

While simple in concept, this no bake peanut butter pie is anything but basic. The filling contains SO much creamy peanut butter flavor and has the silkiest consistency. It’s somehow rich and creamy and light and airy at the same time. I’ve included a couple secret ingredients as well as some essential baking tips to create this life-changing peanut butter pie!

WHAT YOU NEED Crust Oreos or Nutter Butters Unsalted Butter Peanut Butter Filling heavy whipping cream powdered sugar full-fat cream cheese creamy peanut butter (like Jif or Skippy) sweetened condensed milk vanilla extract honey roasted peanuts

1. Whether you’re using Oreos or Nutter Butters, mix the ground cookies with the melted butter and press into a standard pie dish. Chill in the refrigerator.

Crust

1. In a large bowl using a hand or stand mixer with the whisk attachment, whip the heavy cream and 2 tablespoons of powdered sugar on high speed until you reach soft peaks (do not over whip). 2. Scoop the whipped cream into a separate bowl. Do not clean the mixing bowl. Just add the cream cheese and remaining ¾ cup powdered sugar to the bowl and mix until smooth.

Peanut Butter Filling

3. Then mix in the peanut butter until smooth, followed by the sweetened condensed milk and vanilla. 4. Scoop half of the whipped cream into the peanut butter mixture and fold to combine. It will look wrong until it looks right – light and smooth.

5. Spread the filling into the chilled pie crust and top with the whipped cream. Sprinkle the peanuts on top and chill for at least 2 hours or overnight. 6. Now slice and dig in!
