Description

This strawberry mojito is the perfect summer cocktail made with fresh strawberries, rhubarb syrup, and bright lime and mint!


Ingredients

Rhubarb Simple Syrup

  • 2 cups rhubarb, sliced (fresh or frozen thawed)
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (115g) water

Strawberry Rhubarb Mojito

  • 68 mint leaves
  • 1/2 lime, juiced
  • 3 strawberries, quartered
  • 1/2 tbsp strawberry jam
  • 3/4 oz rhubarb simple syrup
  • 2 oz white rum
  • 24 oz club soda or sparkling water

Instructions

Rhubarb Simple Syrup

  1. Add all of the ingredients to a saucepan over medium heat.
  2. Stir occasionally and bring to a bubble.
  3. Remove from heat and allow the syrup to steep for 1 hour.
  4. Then strain and chill before use.

Strawberry Rhubarb Mojito

  1. Add the mint leaves, lime juice, strawberries, and jam to a highball glass and muddle into a pulp.
  2. Stir in the rhubarb simple syrup and rum.
  3. Fill the glass with ice and top with club soda or sparkling water.
  4. Stir before drinking and enjoy!

Notes

MOCKTAIL – Omit the rum and add a bit more sparkling water!
