Description

This lemon puppy chow is bright, sweet, and impossible to stop snacking on. Crispy cereal is coated in creamy white chocolate and fresh lemon zest, then tossed with crushed lemon cookies and dry lemon pudding mix for the ultimate sweet summer snack mix. It tastes like lemon cookies and muddy buddies combined into one easy no-bake treat.


Ingredients

Lemon Puppy Chow

  • 6 cups (190g) Rice Chex cereal
  • 11 oz bag white chocolate chips (I use Ghirardelli)
  • 2 tbsp refined coconut oil
  • Zest of 1 lemon
  • 10 Tate’s Bake Shop lemon cookies (they also make a gluten free version!)
  • 3.5oz box instant lemon pudding mix


Instructions

Lemon Puppy Chow

  1. Add the cereal to a large bowl, preferably one with a lid (otherwise you can stir the puppy chow instead of shake). 
  2. In a heat-safe bowl (I use a 2 cup measuring glass) heat the white chocolate chips and coconut oil in the microwave in 30 seconds intervals, stirring between each one, until melted. This shouldn’t take more than 90 seconds total – be careful not to overheat otherwise the white chocolate can seize. 
  3. Pour over the cereal and top with the lemon zest. Use a rubber spatula to stir to coat. 
  4. In a large ziplock bag, crush the cookies and shake in the lemon pudding mix. Pour over the cereal and shake or stir to coat. Now dig in!
