First, soften the ice cream and spread it into a baking sheet in one layer. Freeze while we make the brownie cookie dough.
To make the dough, mix eggs and sugar followed by melted butter, chocolate, vanilla, and then flour, cocoa powder, leaveners, and salt.
Chill the dough for 1 hour and then bake into perfectly glossy and crackly cookies with a tender center and chewy edge.
After the cookies have cooled and the ice cream chilled, stamp out rounds of ice cream using a 3" round biscuit cutter.
Sandwich the ice cream between two cookies & roll in pistachios. Freeze to set then enjoy!
