If you are peanut butter and marshmallow obsessed like I am, you are going to LOVE this Edible Fluffernutter Cookie Dough. You can whip it up as fast as you can make it disappear with a big spoon and a couple friends. The best part is that it’s totally safe to eat because we all know the best part about making cookies is snacking on the cookie dough!
Not only can you eat this straight from the bowl, but there are so many ways to incorporate it into your favorite desserts. Scoop it on top of cupcakes, spread it on some fudgy brownies or creamy cheesecake, eat it with a scoop of ice cream, or even sandwich it between two peanut butter cookies. The possibilities are endless!
The main reason why I wanted to incorporate this flavor combo into an edible cookie dough is because marshmallow fluff is tough to bake with. It completely loses its shape in the heat and can harden once it cools. I absolutely love peanut butter and marshmallow together and wanted to create a dessert that was easy to make with a difficult ingredient.
I think this edible fluffernutter cookie dough did the trick!
How to make edible cookie dough
Edible cookie dough is probably the easiest dessert you can make. Just use any old cookie recipe, omit the eggs, and heat treat the flour. Because there’s peanut butter in this recipe, it makes the cookie dough consistency even creamier. Plus, it helps bind the dough together. You can even taste test along the way and add more flour to get the consistency you like. Since there’s no baking involved, what you make is what you get!
Customize your cookie dough
You can eat this cookie dough just the way it is (because it’s so dang good) but you’re welcome to add whatever you like! That’s the beauty of cookie dough. It’s a blank slate for you to go crazy, kinda like froyo. For this recipe, I think some chopped up nutter butters, mini marshmallows, mini peanut butter cups, chocolate chips, or chopped roasted peanuts would go so well. My mouth is actually watering right now just thinking about the possibilities.

I can’t get enough of this fluffernutter cookie dough. This edible peanut butter cookie dough has a delicious marshmallow swirl. It’s totally safe to eat and so easy to whip up!
- 1/2 cup unsalted butter, room temp
- 1/3 cup sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 2/3 cup creamy peanut butter
- 1 cup all-purpose flour, heat treated
- 1/4 tsp salt
- 3/4 cup marshmallow fluff
- Start by heat treating your flour in a microwave safe bowl. Microwave for 50-60 seconds until the flour reaches 160F.
- Using an electric mixer, cream together the butter, peanut butter, sugars, and vanilla.
- Once smooth, mix in the flour and salt. When that’s combined, crank the speed up to medium-high and mix for a couple minutes until it’s light and fluffy.
- Gently fold in the marshmallow fluff so you get ribbons of marshmallow throughout the dough.
- Eat right then and there for place in the fridge in an air-tight container. You can eat it at room temperature or fresh from the fridge. Enjoy!
